Italian Steak and Vegetable Skillet

I have an abundance of zucchini and needed a recipe to use it in. So I came up with this Italian Steak and Vegetable Skillet recipe that is full of flavorful goodness. Here is what you will need..

Cut  2 lbs of  round steak into 4 medium-sized steaks. Brown in lightly greased skillet on both sides. Remove to a clean plate and add 1/4 cup chopped onion, 1/4 cup chopped green pepper and 1/4 cup chopped mushroom and cook till vegetables are tender.

Add meat back into fry pan and cover with vegetables.

Pour 1 can Italian diced tomatoes over top of steaks and vegetables. Mix in 1/8 t. garlic powder, 1/2 t. basil, 1/4 t. oregano, 1/2 t. pepper and 1/8 t. red pepper flakes.

Cover and simmer for 2 1/2 hours. Then remove steak to a clean plate and add 2 medium zucchini chopped into 1/4 inch slices. Stir into vegetables.

Place steak back on top of vegetables and cover. Simmer for 20 minutes more. Before serving sprinkle steaks and vegetables with Italian Cheese blend.

Let cheese melt and serve.

Italian Steak and Vegetable Skillet

2 lb. beef round steak
1/4 cup chopped mushrooms
1/4 cup chopped green pepper
1/4 cup chopped onion
1/8 t. garlic
1/2 t. basil
1/4 t. oregano
1/2 t. pepper
1/8 t. red pepper flakes
1 14.5 oz. can italian diced tomatoes
2 medium zucchini chopped into 1/4 inch slices
Italian Cheese for topping

Cut steaks into 4 serving-size pieces. Lightly oil a large skillet and add meat and brown both sides. Remove meat to a clean plate. Add mushrooms, onion and green pepper to the skillet. Cook until vegetables are tender. Return meat to skillet and add in undrained tomatoes and seasonings. Cover and simmer about 2 1/2 hours or until meat is tender, stirring occasionally. Again remove meat to clean plate. Stir chopped zucchini into vegetables and top with steaks. Cover and simmer for 20 more minutes.  Remove lid and sprinkle with italian cheese and let melt. Serve.
