Ground Beef And Cheese Stuffed Acorn Squash

I had never had Acorn Squash before. I found out that I love it.  This Ground Beef And Cheese Stuffed Acorn Squash recipe was adapted from one I found on the internet. First pre-heat your oven to 375 degrees. Coat a baking sheet with olive oil. Cut your acorn squash in half with a very sharp knife. With a spoon scoop out the seeds. Salt and pepper and lay on greased baking sheet scooped side down.

Bake in preheated oven for 1 hour. While the squash is baking brown 1/2 lb. ground beef in fry pan. When browned add 1/4 cup chopped onion. Cook until onion is tender.

Add 1 8 oz. can tomato sauce, 1/8 t. garlic powder, 1/8 t. basil, 1/8 t. oregano and 1/8 t. pepper. Simmer on low to keep warm until squash is ready.

When squash is ready remove from oven and flip over.

Place about 1/4 cup ricotta cheese into the bottom of each squash.

Divide the meat sauce into each squash.

Doesn’t that look so good? Next top each of the squash and meat sauce with 1/4 cup grated mozzarella cheese and 1/8 cup grated parmesan cheese.

Place the squash back into the oven and bake for another 10 minutes until cheese is melted and slightly browned.

Ground Beef And Cheese Stuffed Acorn Squash

1/2 lean Ground Beef
1 Acorn Squash
1/4 cup onion
1 8 oz. can tomato sauce
1/8 t. garlic powder
1/8 t. basil
1/8 t. oregano
1/8 t. pepper
1/2 cup ricotta cheese
1/2 cup grated mozzarella cheese
1/4 cup grated parmesan cheese

Preheat oven to 375 degrees. Grease baking sheet with olive oil. Cut the squash in half. Scoop out seeds with a spoon. Sprinkle each half with salt and pepper to taste. Place squash scoop side down and bake in 375 oven for 1 hour. While squash is baking brown ground beef in fry pan. Add onion, tomato sauce, garlic powder, basil oregano and pepper. Simmer on low until squash is ready. When squash is done baking flip and put 1/4 cup ricotta cheese into each hole. Then divide meat sauce and fill each hole. Top with the grated mozzarella and grated parmesan cheese. Put squash back into oven for 10 more minutes until cheese is melted and slightly browned. Serve.
